We've all experienced this disappointment: muffins that come out of the oven looking great... but become dry after the first bite.
Making moist muffins is not complicated. Often, a few small details make all the difference. Here are our best tips for soft, moist, and consistently successful muffins.
Don't overmix the batter
This is probably the most common mistake. When you mix for too long, the gluten develops more, and the muffins can become more compact and drier.
The secret? Mix just enough for the ingredients to be incorporated.
Let the batter rest for a few minutes
At MUFF, we always like to let the batter rest for about 5 minutes before baking.
Why? This short resting time allows the dry ingredients to absorb the liquids and helps achieve a moister texture.
Pay attention to baking time
Even a few minutes of overbaking can make a difference. Start checking your muffins a little before the recommended time ends.
The best test remains simple: insert a toothpick into the center. If it comes out clean or with a few crumbs, they're ready.
Use enough fat
Oil plays a big role in texture. It helps keep muffins tender and moist longer. This is why many muffin recipes use oil instead of butter.
Add fruit
Fruits naturally add moisture.
Some easy ideas:
-
frozen strawberries
-
extra blueberries
-
frozen peaches
-
apples in small pieces
A small addition that often changes everything. Check out our blog post on using frozen fruit in muffins.
Avoid adding too much flour
When measuring by cup, it's easy to add more than intended. Too much flour can result in denser, drier muffins. Fortunately, with MUFF mixes, the quantities are already perfectly measured—one less step, and a more consistent result.

Because between a decent muffin and a muffin you grab before it even cools down... sometimes it's just a few small tricks.
Happy baking!
