How to freeze muffins? (without losing their softness)

You've just baked a beautiful batch of homemade muffins, everyone eats one or two… then there are a few left on the counter. What do you do to avoid waste before they get too dry? You freeze them, of course!

Here's how to freeze your muffins so they stay as moist and delicious as they were on day one.

Let the muffins cool completely

First things first: patience. If the muffins are still warm, they will release steam once wrapped.

Result: condensation, then ice crystals that can make the muffins wetter or alter their texture. The best thing to do is to let them cool completely on a wire rack before freezing.

Wrap them properly

The number one enemy in the freezer? Air.

To preserve all their freshness:

• Place the muffins in an airtight freezer bag or a tightly sealed container.

• Remove as much air as possible.
  (A little homemade trick: slip a straw into the corner of the bag, gently remove the air, then quickly seal it by removing the straw at the very last second!)

• If you stack several muffins, add a sheet of parchment paper between the layers.

A little tip: write the date on the bag.

• How long do they keep? Well-wrapped homemade muffins generally keep for up to 3 months in the freezer.

How to defrost them

Method 1 — At room temperature
Leave the muffin on the counter for about 1 to 2 hours.

Method 2 — Directly in the lunchbox
Place a frozen muffin in the lunchbox in the morning. It will be thawed and ready to eat at lunchtime.

Method 3 — A few seconds in the microwave
About 20 to 30 seconds are enough to get a soft muffin again. (A few extra seconds even make it seem like it's just come out of the oven!)

Can all muffins be frozen?

Yes. Wild blueberry, double chocolate, banana-choco, cinnamon and raisin muffins… they all freeze very well. Even muffins made with plant-based milk or without eggs generally maintain an excellent texture.
