More and more families are looking for egg-free muffins—whether for allergy reasons, vegan diets, or simply for convenience. At Muff, this isn't a trend we follow: it's a choice we made from the start.



 

Our muffin mixes have been designed to be naturally egg-free, while still offering a moist texture, good hold, and comforting taste. Here's why.

A natural egg substitute: ground flaxseed

Instead of using egg as a traditional binder, our recipes contain a sufficient amount of ground flaxseed. When flaxseed is mixed with liquid ingredients (milk and oil), it develops a slightly gelled texture. This natural reaction helps to:

  • Bind ingredients
  • Stabilize the batter
  • Maintain a moist texture
  • Ensure a good structure during baking

In other words, flaxseeds act as a natural egg replacement in our muffins.

Why let the batter rest for 5 minutes?

In our instructions, we always recommend waiting 5 minutes before portioning the batter into molds. This step is essential.

It allows the flaxseed to:

  • Hydrate fully
  • Develop its binding power
  • Slightly thicken the batter

This short resting time ensures a well-structured muffin, even without an egg. It's a small technical detail that makes all the difference.

The benefits of flaxseed

Beyond their technical role, flaxseeds also provide interesting nutritional value. They contain:

  • Dietary fiber
  • Omega-3 fatty acids (ALA, plant-based)
  • Plant compounds called lignans

Of course, a muffin is still a treat — but flaxseed adds a little extra nutritional dimension, without compromising on taste.

Can an egg be added to our mixes?

Yes. If you add an egg to your liquid preparation:

  • The muffin will rise slightly more
  • The texture will be even richer

However, it is absolutely not necessary. Our recipes have been developed to give excellent results without an egg.
