If the idea of baking your own Christmas log scares you, I beg you not to be afraid to try this recipe. It’s super easy, even if the look is worthy of neighborhood bakeries.

Christmas Log, naked-cake style

To purchase a gingerbread mix (limited quantities), click here.
Instructions:
step 1
Prepare the Gingerbread muffin mix by adding the liquids as indicated on the package + 1/4 cup of water. Adding water makes the mixture more fluid and easier to spread on the baking sheet. 
step 2
On a baking sheet approximately 11 x 17 inches, place parchment paper and spread the mixture.
step 3
Bake in the oven at 375° for about 12 minutes or until a toothpick comes out clean. Remove from oven and let cool completely.
step 4
Cut into 4 equal sections. You can trim the edges to have straight-sided rectangles.
step 5
Spread the frosting between each rectangle and then stack them on top of each other. Finish by smoothing any excess frosting that overflows onto the edges of the log. This will give you the naked-cake look.
You can decorate your log with white chocolate chips or edible sprinkles. Don't hesitate to ask the children to participate, their imagination is so impressive!
